Settling In
So, school has not even started yet and I am filled with anxiety. Les and I practiced riding the Metro Number 10 line over to Le Cordon Bleu twice in the last two days and like true dorks timed how long it took from stepping out our door to stepping in to LCB. FYI it was 35 minutes the first time and 30 minutes the second. It actually took 11 minutes to walk to the metro, two minutes to walk down to the platform and three minutes to wait for the train. Then eight stops and 11 minutes later we arrive at André Citröen and walked five minutes to LCB. However I am allotting more time for this as I have found out that we have to change into our uniforms upon arrival. No wearing the uniform outside of LCB. There are a lot of rules at LCB and not just about hand washing and uniform wearing. Punctuality, excellence and a lot of other private school words I remember from the children’s teachers keep cropping up. Not sure I am up to reliving middle school hell on a daily basis in Paris but I am going in with a positive attitude and my best can-do mantra on repeat in my head, neatly contained beneath my hair net and chef’s cap.
In any event, tomorrow is orientation and I will get said uniform, and a recipe book and a bunch of knives—that I get to engrave with my own name. Excited about that. I bought clogs in Dallas before we left but have discovered they are the wrong kind— I need steel-toed clogs-I guess because either me or others will be dropping heavy pans on my feet or possibly spilling hot, rendered duck fat on my toes. In any event- better to be safe than burned. Thursday is my first day of classes and it’s a doozy! Three sessions of three hours each-back to back. I don’t think I have done anything for nine hours straight since I was—well, there is nothing appropriate to insert there and I suspect my children and my mother will read this so just fill in the blank yourself.
